The cascading rustle of toasty golden-brown grains pouring from a sheet pan. Vibrant veggies, peeks of chopped herbs, and a beautiful, smooth dressing drizzled on top. Give it a shake, and you’ve got the viral crispy rice salad. TikTok’s new favorite way to eat rice is inspired by a Lao specialty, Nam Khao, originally made with deep-fried rice, fermented pork, herbs, peanuts, and lime.
We couldn’t resist trying our own take at home. Our version featured crisp cucumber, bright green onion, creamy avocado, nutty edamame, and sweet bell pepper for the vegetables. For protein, we went with seared tofu, and we crisped our rice by pan-searing and air-frying to perfection. Both the tofu and rice were seasoned with soy sauce and Trader Joe’s Crunchy Chili Onion, giving each bite a perfect umami kick. The result? A dish that is as healthy as it is addictive—fresh, colorful, satisfying.
Upon first taste, the textures immediately captivate. Golden shards of air-fried rice provide a satisfying crunch beneath the vibrant mix of vegetables and tofu. The colors alone—emerald cucumber, sunny bell peppers, deep green edamame, and golden tofu—make the salad feel alive. The tofu brings a savory depth that anchors the salad. Each cube, marinated in soy sauce and chili, has a glossy, flavorful exterior while staying tender on the inside. It’s rich and bold without overwhelming the fresh vegetables, creating a perfect balance of flavor and texture in every bite. Of course, freshness is key to the salad’s appeal. The bell peppers and cucumber provide a crisp, clean bite that refreshes the palate with each forkful. Despite our more than satisfactory results, there were many parts of the cooking process that we could have improved. Most notably, the oven would be a sure way to crisp up every single grain of rice consistently, whereas in the pan and air fryer we used, they only guaranteed browner bits at places that came in contact with the pan. The tofu also could have been cooked differently, perhaps in smaller cubes or crumbles rather than slices, to become another flavor punch in the salad. Lastly, an umami dressing would have tied the components together—perhaps some combination of soy sauce, chili oil, rice vinegar, and garlic.
With our post-experiment recommendations, anyone can endeavor to make a crispy rice salad of their own. Every bite feels customizable—whether you mix everything or savor individual elements, the salad is endlessly versatile. Each forkful delivers something slightly different: the crunch of rice, the savory depth of tofu, the refreshing snap of vegetables.
