Pumpkin Loaf

If you’re anything like me, in a kitchen filled with bakers and cooks you were banished to the “spoon-licker” and “go stand in the corner and don’t touch anything” roles, well, lucky for you, I’ve created a fool-proof tutorial on how to bake a jaw-dropping pumpkin-loaf just for you!

All of these ingredients are either house-hold items from your pantry or something you can get from a quick run to Safeway, so don’t worry about complexity. 

List of Ingredients:

  • 2 cups flour
  • 1 cup of white and brown sugar
  • 2 eggs
  • ~1 tbsp Nutmeg powder
  • ~1 tbsp cinnamon
  • ~1 tbsp pumpkin spice
  • 1 cup vegetable oil
  • 1 tbsp baking powder
  • 1 tbsp baking soda
  • Chocolate chips
  • 1 stick of butter
  • 1 cup Pumpkin puree

To start this recipe off, you’ll need one big bowl (make sure you have room to stir–I spilled way too much pumpkin puree on my counter today).

In your bowl, add one cup of white sugar and half a cup of brown.

Then, add a cup of pumpkin puree, any brand is fine as long as it’s plain.

After you’ve added your pumpkin puree, pour in a cup of vegetable oil (I know it sounds like a lot of oil, trust me, I was skeptical at first as well, it turns out fine in the end).

Then, add around two tablespoons of vanilla extract. I personally measure by heart, but if the instructions give you a sense of security, be my guest and use a measuring spoon.

Once all these ingredients are in, start mixing! By the time you’re done, it should look like a thick, dark-orange goop (sounds so appetizing, right?)

Melt one stick of unsalted butter for one minute in a bowl before adding it to the big bowl

Once you mix in your butter, add two eggs and stir until fully combined.

Now, time for the dry ingredients!

Grab two cups of flour and a tablespoon of both baking powder and soda. Once it’s all incorporated with no lumps, grab your spices! I didn’t use a specific measurement for any of the spices, but I’d add about a tablespoon or two of each.

You’ll need nutmeg, cinnamon, and pumpkin spice.

Chocolate chips are technically optional in this recipe, so if you don’t like chocolate, you’re completely fine without it! I added about two handfuls, but as I said, I believe in measuring with your heart. 

Once all the ingredients are combined, bake in the oven at 350° for 70 minutes.

And voila! You now have created a delicious pumpkin loaf without burning down the house, amazing job!
