No Bake Summer Treats

Looking for some simple, cool recipes to try over the summer?  These three no-bake treats are delicious and the perfect snack for a hot summer day!

1. Rainbow Jell-O Popsicles

  • 3 oz Jell-O packets in the colors of your choice (you can do 6 for every color of the rainbow!)
  • 2 cups of cool water for each Jell-O packet
  • popsicle mold
  • Freezer
  • Something to mix the Jell-O in

Step 1: Mix your first packet of Jell-O into two cups of cool water.

Step 2: Pour a measured amount of Jell-O water into your popsicle mold. The amount will depend on how many colors you decide to use.

Step 3: Place the popsicle mold into the freezer until the Jell-O water is frozen. It takes about an hour for each layer.

Repeat steps 1-3 until your popsicle molds are full.

It’s very important that you wait for each layer to freeze before adding the new layer, otherwise your colors will mix together. Alternately, if you leave the layers to freeze for too long, the layers may not stick together, and separate when you remove the popsicles from their molds.

Step 4: Finally, when you get to the last layer, you’re ready to insert the popsicle sticks into the popsicle molds. Since the Jell-O water is frozen in layers, the popsicle sticks don’t easily insert into the already-frozen layers.

To fix this problem, use the handle of a small spoon—but whatever metal thing you can find that is approximately the same shape and size as your popsicle sticks will work. Warm the utensil in hot water, then gently insert it into the already frozen popsicles. Pull out the utensil and insert the popsicle stick. Then freeze that last layer!

Step 5: Run the popsicle mold under warm water, and take out your delicious rainbow popsicles!

2. Cherry Lime Ice Cream Float

  • 1/4 lime
  • 10 maraschino cherries
  • 2 scoops vanilla ice cream
  • Juice from half a lime
  • 2 Tbsp maraschino cherry juice
  • Limeade to fill the glass about 1 cup

Step 1: Layer ingredients in a glass and enjoy! Top with whipped cream and garnish with a lime slice and cherries.

3. Cheesecake Ice Cream Sandwiches

  • 9 full sheet Graham Crackers
  • 5 oz Cool Whip softened (about half a tub)
  • 8 oz Cream Cheese
  • 1/4 cup powdered sugar

Step 1: Break the graham crackers in half to make 18 squares. Lay out 9 of the graham crackers in a square baking dish that’s been lined with parchment or foil.

Step 2: Whisk the softened cream cheese and powdered sugar together with a mixer on medium speed. Once the sugar and cream cheese are combined and smooth, add the softened Cool Whip and whip together for 1-2 minutes on medium speed.

Step 3: Pour the Cool Whip mixture over the graham crackers.

Step 4: Top with remaining graham crackers to make sandwiches

Step 5: Freeze for at least three hours.Step 6: Once the sandwiches are completely frozen, lift them out of the baking dish by using the paper as handles, and cut into individual squares. Dip the edges in sprinkles, mini chocolate chips, or even graham cracker crumbs. Enjoy!
